Or is it better to hire some company for that? Living in AU

These guys replaced my  windows at the cottage lvery fast. Ordering and delivering the project went without issues and the staff was efficient and professional. The job took two days to complete and the staff cleaned up nicely once they were done. I was full of the joys of spring

You should select any material not based on popularity but it's functionality ! Period !!

Having said that, UPVC is great for almost all weather, doesn't require any pain or surface treatment, comes in standard dimensions etc. Aluminium too is good but it's not very appealing to the eyes after sometime. You may need to do some surface treatment or paint etc. Wood is great, but requires a lot of maintenance, it can be affected by the ambient temperature and humidity, pollution etc.

If it's a new project, I suggest you should choose materials based on the location and area. If you ask me, I will choose all of them but be selective where I use them
